Thread needs more chop-socky.
The Protector stairs fight scene (all shot in one take).

Really any fight scene from Kung Fu Hustle.

And John Wick because why not. He knows gun fu.

Some great picks so far. The Matrix, the Coen Brothers scenes, and anything by James Cameron would also be in my top-picks. Not enough John Woo in here though! Ok there's Red Cliff, but I didn't like Red Cliff.
Hard Boiled is imo the movie with the best action scenes, even though as a movie it's not all that great.

The one-take hallway shootout was very influential, here's a couple of it's more recent imitators:

First, this is from B-movie Universal Soldier: Day of Reckoning. Scott Adkins' character has just broken his programming and goes on a bloody spree throughout an underground complex.

And hell I guess we gotta include everyone's most recent favourite, Daredevil's S1 hallway fight. The level of choreography and thought that went into this was impressive for a TV-show.

I'm not sure how we got this far without any Kill Bill, but here we are. Every single fight from the movies is amazing on its own terms, so in the interest of time: this one spoils the ending, but if you haven't seen Kill Bill yet, that's really your own fault.

Also, the obligatory X2 fight scene. You know, that one.

One extra:
Enter the Dragon - Ambush (see if you can spot Jackie Chan, who was one of the extras apparently):

And was going to include the police ambush scene from "Leon the Professional", but nope it's not on Youtube.

Perhaps not:

Every time someone takes out a gun in a movie, I switch off the movie.
Every time there is a car chase in a movie, I switch off the movie.
Every time there are explosions in a movie, I switch off the movie.
That stuff doesn't interest me at all.
Violence in movies is a sure sign that the movie is gonna be boring as heck.

Heh I wanted to post that Oldboy scene, but it loses its impact without context. Also, all of the YT clips of it I found are shit quality, like the weird captions in yours, or the dubbed version.

Yup, the action scenes that work best are those where the story dictates the action:
