Well, there are many games that ease the player into difficulty without resorting to uninspiring level design. Do not confuse bad level design with low difficulty.
And yes, it's 2014: such tiny level should not be divided into loading zones.
It's difficult to say how large the level is just from limited video evidence and no hands-on experience.

Bafford's on normal was hardly difficult, unless you ignored the cutscene and thought you could walk through the main gate.

Perhaps, but... Spyhopping from Eidos forum who was invited to play this level in Eidos Montreal building in January said that this video shows pretty much the whole level and Garrett's route to the clocktower. I would not expect much more content in the game. Besides, this video shows a city tunnel with no possible intersections, so... what you see is what you get.

Hi, welcome to 2014. Games are a little bit different now than they were 10+ years ago.
Wow, you sound exactly like every single EM level designer, game director, and narrative director that ever did an interview regarding Thief. Congratulations.
Incoming newsflash - not every modern game is like this, nor does it have to be. So don't make it sound like a basic requirement to release a game post 2010.

Not sure if undead have been confirmed or not, but it would be nice to have Haunts or something very similar.

Strange
Gollum-like creatures are confirmed and can be seen quite clearly in 2 recent videos.

Name a modern AAA game that isn't.

You didn't say AAA the first time.
