Levelling is good if done well. If you have to choose between being stealth guy or tank guy, then levelling gives you a decent amount of control over character development.

Oh yes! Also, after playing so much Thief I don't like not being able to climb too :) So often I think "Come on, it's very easy to climb this wall", but alas, the character can't do it.
Actually, I can add any kind of artificial restriction like this. Not being able to jump or not being able to fit into some gap, not being able to swim, basically any kind of invisible wall.
Mafia: The City of Lost Heaven is one of my all-time favorite games, but there are so many invisible walls there, that it's not even funny :)

OK I'll bite - why? That seems like such a bizarre and arbitrary restriction to self-impose.
I mean the backstab example: the only difference from a regular attack is you have a regular attack with a longer animation plus some I-frames. How does this ruin the game for you?

Because I don't feel the character. I want total control over what I'm doing.
I'm not hating on the Souls series, on the contrary, I believe the games are quite good, with amazing boss fights, but ultimately not my cup of tea.

Why? People do it all the time when playing games. Take Thief for example. Some only play ironman, some - supreme ghost, others impose different rules on themselves. Why? Because it's fun for them and not fun otherwise.

Here's another one which comes to mind as I'm playing through Deus Ex: HR - arbitrarily interactive objects. So I can pick up some barrels, some crates and some cardboard boxes, but not the ones which are just scenery. It jars.
