As tragic as I know it sounds I have never played a Doom game before. I did however happen to pick up the Doom 3 BFG Edition the other week, so I guess there's no more appropriate time to finally get started!
Doom 3 is Doom in name only.

I played some Brutal Doom last night for about 3 hours - man, this game is still more fun than the majority of stuff released these days. I had multiple "laugh out loud" moments. And the game still gets the adrenaline pumping.
One of my favorite levels:

Twenty years eh? Wow I didn't realise.

(On that note, can I clarify: does the BFG Edition also include the mission packs for Doom 1/2? I thought I read on a couple of websites that it did, but the case and manual make no mention of them.)
BFG Edition has modified, censored versions of Doom 1 and 2. They also only come with No Rest For The Living, the previously XBLA-only expansion for Doom 2. But they cocked up on that one too, and it doesn't run properly outside of the very bare-bones source port that comes with BFG edition.
You're better off grabbing (
http://store.steampowered.com/sub/18397/) this package. It comes with Final Doom, which is awesome, and Master Levels too.
BFG Edition is nice for getting a revised/improved Doom 3 and No Rest for the Living, but not worth $20 IMO (which is why I haven't bought it yet... should've gotten it during the sale, dammit.)
Speaking of No Rest for the Living and Master Levels...
(
http://www.mediafire.com/?hlow6wc44c6n4w6) This file will make NRFTL + a Doom2.wad (preferably non-BFG) work properly in ZDoom or a variant. Unfortunately NRFTL does not have support in Doomsday yet, but that's just as well because Doomday I think has gotten to be pretty unusable with their latest changes to the options menu.
(
http://maniacsvault.net/files/masterlevelspatch.7z) This file will patch Master Levels into a singular pwad for you to use. Master Levels, unmodified, is a random collection of singular maps created under contract by various members of the mid-90s Doom community hand-picked by id Software. Most of them have no real story to speak of and as they're all individual maps, you have to load each one one-by-one and of course your weapons do not carry over. The patch I linked will connect all the maps, give them a rudimentary story, as well as set a soundtrack based on your preferences (otherwise you're going to hear "Running from Evil" a lot.)
Last thing: Grab (
https://github.com/qbasicer/qzdl/releases/tag/v3.2.2.2-stable) this. It's a launcher for ZDoom, works with GZDoom. Very handy if you have Windows 7 and your damn command line never remembers the shit you put in (I've been typing and reusing "gzdoom.exe -file whatever.wad" for YEARS until Windows 7 removed the command line's ability to remember old commands.)

Probably either Doom 64, Darkening Episode 2 (great deathmatch!), Suspended in Dusk, or Phobos: Anomaly Reborn.
Also very much enjoy KDIZD.
And for something completely different, Phocas Island 2.

No Rest for the Living does start up in Doomsday, I tried it. You have to select Doom 2 and then Nerve.wad as a custom Wad. Are you saying I will run into problems with it later on? I've only started it up but haven't played any of it yet, I'm still playing Doom 1 and after that I'm going to play Doom 2 before I try NRftL. If it causes problems in Doomsday I will play it in ZDoom or GZDoom when I get around to it.
For Doom 1 and Doom 2 I like Doomsday well enough, it adds a few graphical effects but not so many that it stops feeling like Doom, and it runs very well on full HD. I'm playing with the good old sprites for enemies, the polygon enemies do not feel right for me.

Yes, you will. For whatever reason, the exit to the secret level in the 4th map does not work, and of course there's no MAPINFO so the levels have the wrong names and proceed in order of numeration, rather than stopping after the 8th map -- you'll instead go to the 9th (secret) map, and when you finish that you go on to MAP10 of the original Doom. The music is all wrong too.
Doomsday hasn't added proper support.

Okay thanks for the info. I just tried it in Doomsday and the first map has the right name, but the music is that of the first level of Doom 2. I'll play it in (G)ZDoom when I get around to it.

Brutal Doom is the best Doom experience I've ever had. That pack is amazing. Works with pretty much every Doom wad as well. Played through the entirety of Doom2 with it.
Bretheren, that isn't your playthrough is it? Do you ACTUALLY play on nightmare?

Make sure you include the patch I linked -- load it after nerve.wad of course.

No way, I wouldn't last long on nightmare. I usually play on Ultra Violence though, or whatever equates to that in BD. But I die a lot.
