I'm going to play the original Deus Ex. The game has a "Dolby Surround Sound" option. Should it be turned on? I will be playing the game using stereo headphones, so I assume it's not needed. Am I right?

Not really. That feature makes use of a technology called "Prologic". They matrix-encode an extra two channels into the original stereo ones to get you two extra speakers: front and rear. It sounds kinda weird with vanilla headphones. I've never used a pair that can support Prologic (are there any?).
If you have a decent sound card like an SB live, you would be better off using hardware acceleration and your sound card's ability to deliver surround sound through standard headphones. It is actually quite convincing.

Quite a few actually, the Triton AX720 and Logitech G35s being ones that spring to mind.

Fake-surround technology on X-Fis and other decent sound cards is so good that, really, a pair of stereo headphones is almost as good as a full surround system.
Still got my beautiful Auzentench Forte sitting in its box, waiting for the next PC, because it doesn't work with the motherboard of this one. Someday!
