In that case, Karras was my favorite of the three antagonists, probably because I liked the Metal Age story the best. The woodsie lord didn't do much for me, and the hag isn't a big enough villain.
EDIT: Note my use of the past tense gives away the fact that I haven't played any of the three in a long time.

Besides the hilarious argument between the guards on the rooftops I think the conversation between Sheriff Truart and Karras is one of the best. Truart sounds like an overstuffed pompous pillow but the overall dialogue and voices are great.
