Do you really need sneak if you can just cast chameleon or invis?

It could also be said that what's the point of those spells when you have skills that do the same thing?
The main answer is choice and roleplaying (being a roleplaying game and all that). If you want to play as a Mage, then you would perfer the spells, however, if you wanted to play as a Thief, you would prefer the skills.
Also, the skills don't take Magicka to use. :)

There are ups and downs to using either method.... the magic route isn't all perfect.... and as Striker said, there is the RP aspect of the game was well.
You want to cast chameleon because you'll be seen as soon as you do anything with invisible, however to do a 100% chameleon you need some pretty serious skill stats as well as lots of Magicka (the spell required for that is pretty intense for any period of time).... while sneak needs to have it's stats pretty high for it to keep you unseen for a long period of time, once you've got it up there you can just about stay invisible forever, no drain on Magicka.
Lockpicking has a similar problem, 100pt unlock spells use up some serious magicka as well as requireing a high level stats to give you a fighting chance of casting, where I can lockpick some pretty tough locks with some good picks and a moderate skill.
The charm thing has it's shortcomming in that you're not going to have much luck taunting people if you rely on charming your way past them instead of really boosting your speachcraft.
Finally, security and sneak both work toward your pickpocketing skill. There really isn't any sort of magical equal to that.

If you were a merchant or aristocrat type of character, you should have a lot of money. So instead of going the magic or thief route, why not go the stylish route instead?
With the right amount of money, you can enchant items. You could spend thousands on an amulet able to unlock a 100pt. lock ten times, or be cheap and have it only able to open it once before needing to recharge.
Same goes for chameleon, except you would most likely have VERY short durations (3 seconds) if you want something practical. One of my first character had a lot of rings, amulets and other apparel enchanted with different spells for any ocassion :thumb:
(I never really used the pick pocket skill, but that's a good point nonetheless.)

With like four or five pieces of clothing you can make yourself completely invisible CE.... I think you need to mix a ring or two in there to make it work though (24 pts in each, I think gloves, shirt and pants round it out to right at 100% or something). Saw it mentioned for that use as well as Sancturary in a FAQ over on GameFAQs.
I guess this all goes to show how flexable Morrowind really is in letting you play just about any way you want.

Speaking of rings, is there a mod that allows you to wear more than 2 rings (10 would be a logical number), and if "no" how can one go about creating it?

Think about Morrowind as it is right now. Then enable the ability to wear ten rings at once. A bit overbalancing, don't you think? Heh. Having a full set of exquisite clothing should be enough for any one spell (such as chameleon), then just carry around different sets for other spells.

It is possible to create a mod to let you wear lots of rings but that would require high level scripting and since I deleted CS I can't do.
But I agree, 2 rings is enough; I wouldn't mind having my magic character with a few extra rings to increase his magic beyond 1200 and his destruction past 250 but he is on my xbox version anyway so I couldn't mod him.

More magicka I can understand. It's just a pain to have to keep restoring it. Destruction... well, if it's already past 100, I guess that's ok.
I used the Corprus Disease to get my strength up to around 270 and it really did just ruin the game for me. I got so bored I went around killing everyone I saw.
