I've been reading some posts on here about different house... I'm not sure on a couple things.
1) Do they all have wonderous benifits? And can I build a stronghold w/ any house?
2) Which would suit a murder-happy redguard rogue the best? I hear the the Telvanni seem to be a little more magic oriented (which I don't want), but what about the other houses?

The Telvanni you dont want-NOT unless you have aplenty of Levitating things... Telvanni houses are extremely secure because if you cant fly, you cant get around. :cheeky: thats why I have mine as a Telvanni house-secure from theives that cant levitate. And It suits my love for magick!
Redoran houses might be more appropriate for you... being as your redoran. They are those Skar houses. You can find houses like them in Gnisis, Ald'ruhn, and um... other places.
Hlaalu houses look like those in Balmora, at least I'm pretty sure they do. kinda the basic medieval style type of house.
Here's how I think it is between the great Houses:
Telvanni-A good house for aspiring Mages, Battlemages, Nightstalkers... etc. basically good for mages in general. If you know how to fly and dont mind REALLY cramped spaces then this is a good one for you.
Redoran-I'd say it would be best for Fighters. As house Hlaalu seems to be more about theivery and stuff... though I'm not quite sure about that. Anyway dont trust me on anything to do with House Redoran or Hlaalu
Hlaalu-I think Hlaalu is more for theives... though I'm not sure, so dont trust me on it.

Yes :cheeky: I'm a level 36 Telvanni mage, and I got angry at the Magister because I wanted his job... So I attacked him, my first time I underestimated him... the second; he died. And y'know I had to summon Six Atronachs to kill the guy! lets see... 2 Storm Atronachs, 2 Flame Atronachs, and 2 Frost Atronachs. I doubt you would last long against him... And getting to all the Mage-Lords will be a problem for you to; Ya HAVe to levitate to each and every last one of them... so you better get a Wizards staff, or a Dagger of Heaven, or even better, a Levitation spell, scroll, or potion! But those Mouths should be a lot easier to kill, they're all in Sadrith Mora by the docks, in a huge spherical Telvanni Mushroom house.

I fear it'll be quite awhile before I go start attacking ranking mages... I'm pretty weak. What do you think would be the quickest way to get stronger and more socially powerful? Fighters Guild?? That's what I have been doing... it doesn't seem like I'm making a whole lot of headway. The keep promoting me, I'm a defender now I think, but I still can't train or barter from some members, especially that bastard in Vivec. I'm thinking maybe I should go do house quests instead, maybe gratification is a little quicker in coming. Do I actually get something from the Fighters Guild?

Bah, mages are easy if you have the Atronach birthsign or enchant a couple items w/ constant-effect 'reflect' or 'absorb' enchantments. Then you just have to worry about physical plows... and with a good set of armor that's negligible as well.
Btw, I just finished all Redoran quests.... talk about cheap buggers. Red was complaining about that but I thought it might get better at the end. Wow, you get a few non-cuirass type ebony armor for the last few quests... gee whiz.
As to a good guild for getting socially/physically powerful, try the Imperial Legion; most prices seem to drop to 1/3 of orig. when I max out w/ them, and you get half-decent medium armor from them for free.
(Oh, btw, Hlaalu are more merchants than anything else)
