I'm running Deus Ex for the first time and I came across the same kind of dithering issues that have been reported here before. Using 32-bit textures as other threads have suggested mostly fixed them, but not completely. There is still some discoloration on the door jamb and the wall in the shadows. Using the OpenGL renderer didn't change anything.
I tried to take a screenshot to show the problem, but interestingly enough, when the shot is rendered outside of the game, it looks perfectly fine! No dithering or anything; it's completely normal.
Also, for some reason, changing the textures to 32-bit makes the sound in the cutscenes and in the game sound like it's being run through a filter to make it robotic. Interestingly, this seems to only affect in-game and cutscene sounds; the menu music, as well as the test speech that plays when you enter the sound menu, are fine. I assume it's a problem with the sample rate, as I fixed it by turning it down from it's default 44100 MHz to 22050. That still leaves me with the graphics problem, however, and I'm not keen on having such a small sound sample rate as I don't want it to impact the quality of the game's sounds. Can this be fixed?
Finally, I noticed an odd artifact in the reflective surface of the floor in the training mission. The reflection becomes distorted when running, as if my hips suddenly bulge out. Everything shrinks back to normal when I stop. This isn't really a game-halting thing, but I'd be interested in knowing if there was a way to fix it. Screenshot below:

Make sure that you're using a latest drivers from your hardware vendors, not from Microsoft.
As for OpenGL renderer for Deus Ex: do you mean (
http://www.cwdohnal.com/utglr/) Chris Dohnal's one? If not, please try it.
As for audio problems: perhaps the root of the problem is in the multi-core nature of modern CPUs (including your Core 2 Duo). Try to toggle the game into the "Single-core mode" with (
http://www.ttlg.com/forums/showthread.php?t=127533) FlipTIB.

Okay, FlipTIB seems to have fixed my sound problem, thanks.
As for the graphics, I tried the OpenGL and Direct3D9 renderers you linked to and neither helped the graphics problem.
Oh, and by the way, I realized just now that the bulging hips I reported was actually my avatar's trenchcoat flying open when I'm running or crouching.
EDIT: I figured it out. The gamma was too high in-game. Looking at the screenshots I took, I realized that they were a lot darker than the game was. Once I turned the gamma down, the odd colors vanished into the shadows. Thanks!

You're welcome :).
