So I know of some copies of the mission files out there that were in work and what were 'final' at that moment, along with the .gam file still exist.
Along with some editing assets I think for DromED. (This was the dark engine version)
Has anyone tried to work on it or get the levels rebuilt for another engine?

If I recall correctly, you couldn't get the mission files to run in dromed, since it was a later version.
But it was so long ago I really don't remember anything.
It was also really early versions of the maps with vast empty spaces, per their stepwise refinement method.
My intuition is it'd be easier to re-make the levels from screenshots and the few notes we have about the game anyway. I don't know anyone that's worked on it.
I think of it like when the T2 Gold missions came out around the same time. If anything deserved to have a team working on finishing a campaign it would have been that one, and if they had come out around 2003~2006 I bet they would have, but it came a little too late to get people working on them. So if T2G couldn't get people working on it, what chance would Deep Cover have? (Unless people have worked on it after I looked into it ages ago and I'm out of the loop now.)
Since this is still a Dark Engine game meant to run through Dromed, I feel like this thread is better placed in the Thief Gen or Thief Mods forum, and I think you'll get a better response there than here, but that's just my instinct.

Ahh okay. I just didn't know about it! I was just looking online and wanted to know. Thank you :)

That's the main announcement thread where I think you can still get the files.
I think someone in the Dromed Discord is working on getting it into a playable state using the SS2 version of the engine.

I can say it is in a more "explorable state". Making it in a playable state would be very hard in my opinion.

So yeah, some sort of an easier way of exploring the levels. Should work on both Thief 2 and System Shock 2 (SS2 has weapon support, cool!)
