There are several green leeches which are scattered about in the Abyss. If you use one it will remove the poison from your blood, but will remove some blood as well. If you are low on health I think it can kill you. You can also sleep away the poisoning, though not a good idea if you are low on health.
If you are a magician you can use Cure Poison located in the fifth circle of magic. It will completely remove the poison without any side effects.

There are cure poison potions as well, but I think they're rare.

Not so rare, I remember finding them quite often.
But they are quite useless:
you have to identify the potion first, which needs good lore points or a fifth circle name enhancement spell.
So it's easier (and uses lesser mana) to cure the poison with a spell than find a potion, identify it with a spell and then drink it.

Aren't all potions colour-coded? Eg in UW2, red = cure poison; not sure if the same colour scheme or any scheme at all applies in UW1 though.

No, there are no color-coded potions in the Stygian Abyss.
