The millennium titles changed a bit with each season. the difference between first and 2nd season wasn't so pronounced, but the third season had probably a third of the visuals changed, and a little sting added to the music (which was not a step in the right direction, that theme is amazing as it is)
plus they had to remove meghan gallager from the credits because Catharine dies at the end of the 2nd season.

Most of the HBO series have good to great title sequences:
Rome,
Carnivale,
The Sopranos,
The Wire (the latter with a different sequence and version of the theme song for every season).
Dexter's also got a great title sequence. I'm sort of lukewarm on the series, but the titles are ace.

Even though we're all sick to death of it by now, The Simpsons unquestionably has one of the most memorable opening sequences of all time.

Granted, we're only 3 episodes in, but damn...it has to be one of the slowest developing shows in the history of modern television.
