That has already been done, but the resolution was improved, not the content of the video like lighting, objects, etc.

The rule that you can't create high quality media from low quality sources wasn't inverted by Savant's videos. And in a size/quality ratio they loose compared to the originals.
Making new videos for SS2 has been proposed a few times but nothing has ever come from this. To my knowledge there exist 2 models of the Von Braun but of course that's just a part of it. No model of the Rickenbacker has been created so far. I think someone made a shuttle once.

in other words, what i suggested hasn't been done. :p
i've got the higher-res cutscenes in a zip file somewhere for the next time i install SS2. they don't look so damned muddy. but they still look muddy.
