I'll just say this. For production values in rock music there's Roger Waters and Donald Fagen...then there is everybody else.

Cream, Blind Faith and Derek & the Dominos.
While they may all have Clapton in them, they all rock hardcore (so much harder than anything he released by himself save maybe There's One In Every Crowd or 461 Ocean Boulevard (and that MTV Unplugged album was good, but not in the same way)).
Creedence Clearwater Revival's first 4 albums.
Bob Dylan & The Band, The Basement Tapes.
A Band of Gypsys, Band of Gypsys.
George Harrison, All Things Must Pass (even with all the jokes about being the songs John/Paul wouldn't put on a Beatles album).
I won't discuss Zeppelin, but you should be able to guess how I feel about those albums from the previous statements.
The Allman Brothers, Live at the Fillmore East (or The Fillmore Concerts).
BEACH BOYS, PET SOUNDS, YOU GODDAMN BASTARDS.
The Grateful Dead, American Beauty or Workingman's Dead. Shut up you hippy bashers, these are good albums.
Crosby, Stills, Nash & Young, Déjà Vu.
I don't give a shit what you people who think that classic rock is dated think, because of course it's fucking dated. It's not called "CLASSIC" FUCKING "ROCK" because it was written yesterday asshats. And saying things like "it might have been edgy then, but it's totally not now" are useless. That's like saying "that punk record was new 5 minutes ago, but it's totally old and stale now. Fuck them, those sellouts". You're no better than those fucking hipster jackasses who think they know everything about music.

I know this isn't a direct reply to me, but those are just some excellent albums you listed that I have to reply :)
Cream, Blind Faith and Derek & the Dominos - I just got Blind Faith, and D&theD on vinyl - I have heard so much I've never heard before on them. I definately agree with you that they are some of the best albums of all time!!!!
Creedence Clearwater Revival's first 4 albums - I only have the live at Royal Albert Hall album, but it kicks ass and I definately plan on getting lots more CCR.
George Harrison, All Things Must Pass - I'll definately look into this, GH is my favorite Beatle - his guitar playing is killer!
Crosby, Stills, Nash & Young, Déjà Vu - each time I see it on vinyl it is scratched to hell - I almost picked it up for 30 dollars new-old-stock, but I ended up getting an import of The Doors - Other Voices (excellent) instead. I have it on CD though, and it gets played constantly. Neil made their harmonies have edge.
A Band of Gypsys, Band of Gypsys - The best Hendrix album, period. I love all his other records too, but this is the most powerful album he ever put out.
The Grateful Dead, American Beauty or Workingman's Dead. - Two of my favorite albums by them! My favorite remains AoxomoxoA though.
BEACH BOYS, PET SOUNDS - I really should check into the Beach Boys, their harmonies are amazing.
Bob Dylan & The Band, The Basement Tapes - one of the best albums ever put to tape - though I am still looking for a copy of the complete tapes (I only have the official release by Dylan). I am a huge Dylan and The Band fan - I eat up everything I can hear by them. Before the Flood and Planet Waves are also excellent Dylan/Band collaboration albums.

Tricky's 'Maxinquaye' - a record that can't actually be categorised into a genre with any degree of fairness. And no it's not trip-hop - trip hop is a bullshit term that media/critic types use to pigeonhole certain types of music that make them uncomfortable and/or challenge them reassess their reference point as an audience. This is soulful, fucked-up Bristolian gear from the former Wild Bunch member. He poured his soul into this record and probably that of his muse, Martina Topley-Bird. A great record that goes to well over a hundred spins on the turntable. When you're done with Maxinquaye, a less accessible Tricky record is 'Pre-Millenium Tension' - I actually prefer PMT, despite the fact that it is an impossible record because it must have been made about 100 years into the future.
Richie Hawtin's 'DE9 - Closer to the Edit' is pretty amazing - extremely complex and precise, detailed minimal techno, taken from over 100 other tracks in lengths of between one note and four bars, then meshed using Final Scratch. I idolised the guy for a good 5 years and then eventually fell out of love with it when I realised his music didn't actually say anything to me about my life, no matter how much I extrapolated.
Also Faust's 'FAUST IV' is krautrock fantastic
But none of this is classic rock so I'll just get out.
