I like those as well, but I get tired of hearing them over and over again on the radio and Christmas albums, which is why I'm more fond of the less traditional stuff (like what I posted earlier).

I've been quite enjoying Sting's (
http://stingwintersnight.com/) "If On a Winter's Night..." which he's dubbed more of a "Winter" album rather than a Christmas album. It's really haunting for the most part - an odd blend of traditional, folk, and classical that works really well. It's different for him, but fits his voice perfectly. Lots of cool instrumentation and songs I'd never heard before.
