Unless you had something else in mind, it's been my experience they are grateful for the people they've met for it, events that happened for it, lessons learned for it, etc., that they never would have. It comes from realizing they've had many blessings they see non-deformed people haven't, as a direct result of their deformity.

I've never heard of disabled/special needs/mentally-challenged kids as being "gifted" but I have heard of them being referred to as "blessed", I think this is a relation to innocence. It's somewhat retarded though.
