Only here in North America do we think it's garbage, but the only reason it's over here is because they were brought here in the 19th century because immigrants missed eating it.
So, you Jewish people, Germans, Asians, all the groups that traditionally enjoy carp, please tell me your secrets for cleaning and cooking this fish. I've had gefilte from a can, and I thought it was fine.
Please no stories about cooking it on a cedar plank and throwing out the fish and eating the plank.
I'm serious here.

Hehe, funny thread. Carp is a specialty here in franconia. We mostly eat carp fried, served with potato-salad.

Dip a halfed carp first in flour then in the beer dough. Fry in butterfat until golden-brown.

I am Roman-Catholic ( not too practical :angel:) and I like the carp baked on spit got freshly, branded to red with a garlic dressing. There are a lot at us in the river, we organize fisher dinners often and this is one of the best bites :p .

I can tell you how to clean a fresh, living carp:
You need a empty bathtub or a very big bucket filled with clean, cold water.
Put the carp in there for at least 2 days and exchange the water very often.
Carps love to dig around in sand and mud and they spent most of their time there. Before cooking the fish, it has to be clean of this sand and mud, otherwise it won't taste very well. Just rinsing the fish for several minutes with water won't help...
Make sure there is no more sand left on the bottom of your bathtub / bucket before preparing the fish for eating.
