Instead of flour coating you might try grinding macadamia nuts and using that instead. Might sound crazy, i know, but it is fabulous. i haven't tried it on mackrel, but i can't see why it wouldn't be good.
I'll third that RBJ is spot on - get yourself a cast iron pan and you won't look back or regret it.
