So I finally went out and picked up a copy of Bioshock. I assumed I'd have no problems with it. My rig can run pretty much anything completely balls to the wall with zero drop in fps.
First I notice ridiculously long load times and then I notice fairly choppy action. It will get better as the textures load in (which they seem to do a few seconds after I actually spot something), but if there's any motion on the screen I lose a lot of frame rate. It's just barely playable. As it is I have it on easy mode and find myself nearly dead all the time because my gun is spinning around aiming randomly at what I'd estimate is 10ish FPS trying to find a target. Once targets die and all is still things become playable again.
Turning down the graphics actually doesn't help. In fact it almost seems to play worse with the graphics down on medium.
I started looking around for info only to find several very long threads on various forums (including 2k's) where people mention the loading time problems. Apparently about 95% of th people have a 7900 or 7950 series card. It's a very common problem. I've downloaded the patch and attempted driver updates and get mixed messages about which work best.
None of the threads I've read really ever come to a solution.
So I'm stuck with nearly unplayable frame rate in fire fights and 5-7 minute load times.
Of all places I figured this place would be the most likely to be aware of a solution.

I've got a similar computer configuration as you, and had the same sorts of problems. I found one of the solutions was to uninstall Symantec Anti-virus. That has never caused a problem with any of my other games ever, but once I uninstalled Symantec, the game ran fine. Still a bit slow, but playable. Oh, I also got rid of 1 GB of my RAM. I had 3, but Bioshock didn't seem to like it. When I uninstalled the other 1 GB RAM module, Bioshock worked well.
Try those two things, and see what happens.

Incidentally, I found that my Symantec security suite started causing my computer to slow down to the point where Notepad took 15 minutes to load, let alone other programs.
Can't say I ever had a problem with Bioshock on my 7900GT card, though.

I played it on almost minimum spec (AMD64 3000+, 2GB, 7600GT 256) and never got load times 5-7 minutes long. The first load was longer, up to a minute sometimes, but quick loads were a lot faster. Strange.
