I prefer gritty fights that are grounded in reality. For this reasons I dislike Ong Bak, especially as the trailer was put together so the fighting looked realistic. Having said that - my list:
Old Boy - the one panning shot scrap with the gang of goons. Just brilliant.
Grosse Point Blank - by the lockers. One of the best, and most realistic, martial arts fights I've seen.
Fight Club - lots of the Fight Club fights. They are harsh and you can feel the contact.
LotR: Fellowship - Aragon vs the Uruk. Love it when the Urukhai slides down on the sword just to prove his hardness.
Last Samuri - ninja attack.
7 Samuri - the "What a waste." fight that last for one hit.
The Matix - Agent Smith vs anyone.
Drunken Master - I think it's Drunken Master. Jackie vs Master Kam at the end. Kam has great speed and his range of techniques is the best I've seen in any one fight.
Does anyone know what the German says in the knife fight scene in Saving Private Ryan? The other guy asks as he is killed and my only German friend who went to see it walked out in disgust at the whole film before that point (hey, ask him not me).

Dragonheart - Funny fight where Dennis Quaid ends up in Dracos mouth. "Why should you be comfortable? My armor is rusting in your drool and your breath is absolutely foul."
24 - I think the second season where Jack Bauer breaks this guy´s neck in the stadium by doing this cool twist at the wall.

Snatch - Mickey versus the bare-knuckled boxer.
Not neccessarily a cool fight, but the one-punch and knowing smile at the end are priceless.
Fight Club - Tyler Durden versus Lou
Getting the shit kicked out of you and just laughing in the person's face as they do it. Incredible. Insane. Ingenious. Not a better way to piss someone off.

I love my Eastern-influenced, heavily choreographed fight scenes so I'm just gonna say Matrix, Crouching Tiger Hidden Dragon, Equilibrium and House of Flying Daggers and get the hell outta this nerdy thread ¬¬

Something that I really liked about Ong Bak was that the individual hits looked like they hurt. You know it's a movie and they're 'faking' it, but often I was just staring thinking "Holy crap, how can you fake that?" which doesn't usually happen when watching a fight scene. Most of the time it looks like two people showing their skills. In Ong Bak it looked like two people
hurting each other with their skills. Everyone involved did a fine job, IMO.
edit: Some of the really contrived moves did look a bit naff, I'll give you that.

Ah yes, the ninja attack on the samurai compound in The Last Samurai was another tense and excellent sequence. I love the way it just came out of nowhere and until now you thought these samurais were badass, then comes in Mr Ninja who for a moment looks like they're going to wipe them all out... if it weren't for Tom.

id have to agree with subjective_effect though: that locker fight in grosse point blank is intense.

I'd like to recommend When The Last Sword Is Drawn (Mibu Gishi Den) to anyone who liked The Last Samurai - Tom's flick was a lot better than I thought it'd be, but Mibu Gishi Den kicks its arse royally. Then again, that's true of an awful lot of Japanese end-of-the-samurai-era films - but this one in particular is quite similar to Last Samurai (in some ways) and came out in the same year.
As for standout fight scenes, I just remembered another: in Kurosawa's The Hidden Fortress, the lance/spear duel between Toshiro Mifune's character and the ebil general. Absolutely amazing, and it lasts for ages. :D
