The final Last of the Mohicans fight was awesome
Oldboy - yeah.
Casshern - Tetsuya vs. oh so many robots.
The Myth (Jackie Chan's latest movie) - It's not out in america, but anyways, the fight scene with General Meng vs. lots of soldiers is just awesome. Same with the Gluepaper fight.
Zoolander - The gasoline fight :p
Lord of the Rings - The epic battles, especially in the last movie.
Equilibrium - Every fight in that movie. Except maybe the first one.
That's all I can think of for now.

Will no one mention Predator? Quite possibly the most manly movie of all time! The final "fight" that lasted like 30 mins totally ruled.

No, I doubt Predator will be mentioned due to the fact that it's a seven foot tall alien just beating the crap out of Arnie for 30 minutes... doesn't mean it isn't an awesome movie, but it's a poor fight scene.

Gangs of New York - miscellaneous brutality throughout including a daylight axe murder. In the finale, Bill the Butcher swooping out of the smoke to hamstring Amsterdam.
Unleashed. Jet Li and some uber-goon doing battle in a toilet stall too small to drop your pants in.
