Most of the fight scenes I'd pick for a list like this have been covered (Evil Dead 2, Chuck Norris vs. Bruce Lee, a few others) so I'll just throw in a couple more that really did it for me:
Hard Boiled - Mad Dog takes on Tequila and Tony in the basement of the bad guys hideout, beats the shit out of both of them, then walks away. That guy was just too cool.
Saving Private Ryan - Mellish takes on the SS bruiser and loses. Badly. When he got the knife turned around and just started fucking leaning on it, it could almost feel 220 pounds of sweaty Nazi goon pressing down on my chest. Very cool shit.
Blade Runner - Harrison Ford vs. Priss and Roy. Not really a fight so much as a shit-kicking, but fun anyway. "This is for Leon!" crunch "This is for Priss!" crunch
A final scene is from a movie I've never seen, don't even know what it's called, but I'm pretty sure it's not a North American movie. (I've never bothered to investigate.) I was flipping around late one night, several months ago, when I stumbled on it. Bunch of people hanging out in a seedy bar, drinking beer, shooting the shit. Suddenly one dude either said something or did something, or maybe he did something earlier that just came to light, I dunno, but whatever it was, it really, seriously pissed off this other dude, who just so happens to be fucking huge. What follows is very possibly the most brutal, vicious, and thorough ass-kicking I've ever seen committed to film. This guy just gets the absolute sweet living fuck beat out of him, including an extremely painful-looking nut-stomp, and as I recall it finally ends with this maniac grinding a busted beer bottle into the poor bastard's guts. I'm pretty big on movie violence, but this managed to actually leave me feeling a little disturbed. Anyway, after the guy was sufficiently pummelled, the scene switched to the parking lot outside the bar, where the guy is moping about how his life is all fucked up and all this and that, and I think his woman got all pissed off and left him (presumably because he's a psycho), at which point I thought, wow, that was cool, and changed the channel.

Drunken Master - The last fight with thunderfoot. I love these classic HKL Jackie Chan films. The dubbing adds to the fight, the drunken "Miss Ho" had me lolling throughout..."This ones called seeing off the ex lover!!"

I gotta touch on some that were already mentioned.
First off, nice one Sypha that is a great fight scene. Also Dia mentioned The Bourne Idenity, when he kicks that guys ass with a ball point pen and the dude throws himself out the window, cool. Also the True Romance fight between Clarence and Drexler is pretty bad ass but not nearly as brutal as the Alabama v. Tony Soprano fight. Watch the unrated version.
And for laughs, at the end of Team America watching all of the F.A.G. members getting torn up is pretty fucking funny.

Shaun of the Dead - You know the one. The first fight with the record collection: "Second Coming?" "I *liked* it!"
Amazed nobody's mentioned it yet: Last of the Mohicans - The final scene at the end between Magua and Chingachgook; the rage and fury in the father's face is striking.:wot:
Also, though it might not qualify, Spaced series 2, the incident with the chavs and the 'gunfight'. "Oooohhhhhh shiiiiiiii" "Chakachakachaka!" Reenacted almost daily with my housemates :thumb:

Rob Roy, and the fight between Tim Roth and Liam Neeson at the end is one of the best (and realistic) swordfights in any movie.
I like almost any Jackie Chan movie (especially the aforementioned Drunken Masters), and I'll add the scenes from
Gorgeous against that short white guy (Alan). Even though it gets a little silly at the end, that last fight scene is amazing. The white guy bicycle kicks like 5 times in one jump; makes Jackie Chan look slow and old.
The final fight in
Ravenous was both brutal and hillarious. I love that movie (guilty pleasure).

My housemate has requested I add this on his behalf:
John Carpenter's The Thing - the bit where they all pile on the crazy doc and Kurt Russell belts him twice, the end. He believes it is the most realistic fight scene ever put on film. He may be right... but whatever, I quite like it too.

I was considering listing this one, but I wasn't sure if it actually qualified as a fight. But since you brought it up, I will absolutely agree. Comedy genius.
Also:
They Live - Roddy Piper and Keith David spend what feels like 20 minutes beating the crap out of each other in a disagreement over eyewear. Pro wrestling + John Carpenter movie: what's not to love?

Kung Fu Hustle (the Lion's roar, hahaha)
Shaolin Soccer - the end-match
Napoleon Dynamite, for goofiness; loved the "fight instructor"
Bride with White Hair, ah it's been too long, the film's great all over, and has v. good fight scenes (Has been described as : "The story itself takes elements of classic Chinese fantasy and mythology and mixes it with a brooding modern narrative style.")

Fuck yes. I forgot about this one. There's such intensity especially since
the father is avenging his son and he fucks Magua up but good. Also, can't beat Daniel Day Lewis's kamikaze run after Cora and her sister through all the enemy indians and redcoats - fucking awesome, and again, the score for this movie
kills me on a regular basis.

I so wanted to mention that. If that scene had ended up in Shaun instead of Spaced, I'll bet it would have a half-dozen mentions :)
Oh, and what the hell.
The Fellowship of the Ring - The fight against the Cave Troll in Moria. That would have been the best CGI vs Live Action fight that I'd ever seen.
