Zatoichi - (the Takeshi Kitano one) the fight in the rain is hair-raising and the fight against the gang towards the end is imaginative and hilarious. Plus the music is fucking ace.
yes yes yes! My favourite fight is the one against Hattori though. Not so multi-person awesome but really cool.
Transformers The Movie - Optimus Prime vs Megatron.

The Duelists - That one duel that takes place in... some kind of storage shed/barn (edit: or stables, maybe?). I can't describe the location much better than that, but if you've seen the film you know which one I'm talking about. Really brutal. This is a film I'm hard-pressed to recommend -- not if you want a story, at least -- but it's certainly well made.
The Crow - Breaking up the meeting above the nightclub.

Untouchables - Three fantastic fight scenes.
I could go for the easy "Just like a wop to bring a knife to a gunfight," but while that's the best line, the fight itself isn't as impressive.
The Ness/Nitti fight on the rooftops is fantastic, if only for the ending.
But the real star is the train station shootout. Besides the film geek shot for shot remake of the Battleship Potemkin Odessa Steps sequence, Garcia is just cold fuckin' blooded in that scene.

You know, I was going to go for this but because the list was more fist-fight and swashbuckler-oriented, I gave it a miss but the train station shoot-out still gives me chills to this day (when he turns around after the insistent calls of "Sir? Sir?" to the building Ennio Morricone score and whips out the shotgun to blast the broken nose guy through the door is one of those JESUS FUCK YES THEY NAILED IT moments of cinema).
The entire sequence is, for me, one of the most chilling, nerve-wracking and damn enjoyable scenes in cinema history, taking its place alongside the original Star Wars death star gulley sequence, Indiana Jones going after that idol at the start of the Lost Arc, the attack on the boat near the end of Jaws, and I'm glad it's got a place in my DVD collection already.

Zatoichi any of the movies. All the fights.
Amen, sir. I love the old Zatoichi movies, though I've only seen a couple of them.
Also, kudos to Scots for mentioning Bruce Lee. I haven't seen that fight with Chucky for a long time. I recently saw Chinese Connection again, though, so:
The Chinese Connection - Pretty much the whole movie. I love the scene where Bruce walks into the Karate dojo and challenges the whole damn school, then proceeds to kick their asses. Sure, there's plenty of cheese- including a bit where he is only too obviously throwing around unconvincing dummies- but still. The bit with the nunchucks, the bit with the sign that made him a demi-god in Taiwan, the fight with the Russian (cue slow mo Bruce)... I love that flick.
Seven Samurai - Don't think anyone specifically nominated this one, and it's another samurai flick, but: The duel between the master and the ronin. The watching samurai know it's over before it even starts. And of course the battle with the bandits. :cheeky:
Bad Day At Black Rock - I've mentioned it before and will again, since it's one of my favorite films. The scene in the cafe. One hand in his pocket the whole time.
If I may be so bold as to include gunfights:
Fistful Of Dollars - The "my mule's feelin' real bad" scene, the "aim for the heart Ramon" scene... very cool.
Unforgiven - when he walks into Greely's to kill Little Bill. Classic.
The Far Country - the scene where the bad guys hear Jimmy Stewart's horse coming, but he ain't on it. This movie is one of my favorites, and also my mom's. That little silver bell on Jimmy Stewart's saddle...

I've hardly seen any martial arts movies, but the most believable fight I've seen is in Crossing the Line.

Last hero in China(aka Chickenboy vs the giant centipede or something) - the final fight between Jet Li and the bad guy. Just as cheesy and violent and stupid as wire-fu can get. Loveit.
The One - where the guy beats up all those cops to the tune of Drowning Pool's "Bodies".
(

Crouching Tiger - When Jen Yu beats up all those doods in the restaurant.
AND STUFF
Fafhrd on 1/3/2006 at 06:57
Equilibrium - The Dog Defense. For less than a minute Christian Bale becomes death incarnate and kills 12 guys without taking a single hit. Probably my favourite "ohshi...did I just see that?" moment, especially once "no wirework" and "no cg enhancement" are factored in.
Brotherhood of the Wolf - Mani vs. Crazy Hunters Part I: where it's all in broad daylight and seems almost like it's all in good fun, and Fronsac Flips Out And Kills Crazy Hunters: sneaking about, flaming arrows, and pummeling the shit out of anyone stupid enough to get close to him.
The Incredibles - Bob Vs Omnidroid. Need I say more?
X2 - Nightcrawler Vs Secret Service, and Wolverine Vs Yuriko.
Gladiator - ARE YOU NOT ENTERTAINED? ARE YOU NOT ENTERTAINED?!

Transformers The Movie - Optimus Prime vs Megatron.
Poor Optimus. The good guys should use human/robot shields more often. As long as they're evil, of course.
Kill Bill, Can't Remember The Volume, Probably 2: You knew Budd had the best fight sequence ever waiting inside him, but he felt so betrayed and disappointed that a bit of lazy extortion was all he was gonna dish out.
Sanjuro: The last 60 seconds. Pure brillance.
Sword Of Doom: Everything.
