I like "Damn boots... stupid toe-pinchers" too, and there's a long-ish one about Benny wishing he was at the pub with everyone else, I don't remember the wording. But I think this is my all time favourite:

Don't remember the exact words, but...When the Eye speaks in the museum in Thief3, it just makes me feel real nostalgic.

It's not really a guard AI, though, but one of my favorite characters.

My favourite have been the Hammerites and especially the Mages:

i find the citywatch guards in thief gold have funny tone and unique accent compared to the guards in thief 2. It sounds like a mishmash of half drunk and half sober
