This thread is great!
It's really hard to pick. So many creative and funny quotations in Thief! The voice acting in these is so spot on, it makes them truly classic. All of these are from TDP.
Hammer1 "Do my eyes show me the right?"
(If you've seen what Garrett's in-game avatar looks like, then you would totally understand why this is such a great line).
Hammer: "Keep silent as possible. There are noises in the night that the Builder did NOT intend!"
(Please oh wise one, tell me what kind of noises the Builder does intend if not needless footsteps and pillaging.)
Hammer: (leaning over to look) "What is going ON over there?!"
("Sorry! Accident. I don't mean to be back here crashing and blowing things up so loudly! Please go back to your post now.")
Hammer: "Alllllll is quiet now. Twas but the WIND on the torches."
(That cadence alone cracks me up. It's like, "Are you convincing yourself that some huge shadow running right before you is just the wind?" Uh. What other delusions have you suffered lately?)
Hammer: "Hm.... NO one walks here now."
(Okay, this one is just too comical esp. after all-too-obvious close encounters with guards that so quickly dismisses your fumbling about with such calmness and conviction. It's even more hilarious right after "What is going ON over there?!")
Hammer: "I can't take this anymo -- this is absolutely ridiculous. Everytime that I turn around there is incompetence -- incompetence in every act that I see performed, except by myself. Well, I can't do it all by myself."
(Wow, this is so funny in so many ways, it goes without even saying. Excellent voice acting!)
Hammer: "All these people I have to work with... are so incompetent, so STUPID, so LAZY. I DON'T see why I should have to be the one to work with these incompetent people."
(Being the little bird I am, overhearing every complaint and diatribe. I have to wonder. Are any hammer guards actually satisfied with their employment situation? LOL.)
Guard: "Wha-o-o-o, the helllll... arrrre... youuu?"
(Inebriated much?)
Guard: "Are you alright? No, no. Of course you're not alright. Sorry!"
(And do you have a habit of apologizing to your dead brethren? LOL!)
Guard: "Whoooarr. Can't... take.... much more."
(Ha! Thanks for the heads up. I was worried you weren't going to give in any time soon! And seriously, if I was under attack, I would be saying a few choice words other than these!)
Guard: "You see anyfing recently? I been seein' fings."
(Uhhh, seriously you just might want to "see" a doctor about that problem.)
Guard: "Heyyy.... fis isn't supposed to look fis way!"
(Oh really? I should certainly hope not!)
Bowman: "Oooh, I think a little bird pecked me!"
(Your sarcasm is seriously wearing thin. Allow me to kill you and put you out of your misery not to mention my own.)

That last one is great! I've only heard it once, and it was so funny! It's done in that school yard mocking tone "nyooh, a liddle birdy pecked me..." *creeeeek* *THUNK* "Ugh!!" (that was me getting hit while running for cover)
One of my favs is a guard from Thief 3, he's got a deep intimidating voice and an american accent, and when he's searching for you, he sometimes says;
"I 'aint got nothin' better to do than hunt you out 'n' smack you aroun'..." the voice acting alone had me thinking that this guy actually might be harder than the usual guards.

Speaking of the female guard, she's got some of my favorites;
"RIGHT!!!" when she sees you for like the second time.
"moh well... probably just the wind..." sounds so cute, in contrast to the aforementioned scream.
"tk tk tk tk do do dee do do..." hehe.

But persoanly me and my friend love playing the game on hard and hitting a guard in the face with a arrow or the BJ and hearing him say "Owww" over and over. It sounds so silly. Then sometimes he'll just say "What are you getting at?" LoL!
I also like jumping on a crate thats at his waiste level and hearing him say "Taffer" or "Come down from there" even though I'm like 3 inches from im.

Speaking of the female guard, I like the idle chatter about different kinds of rocks. I only heard it while listening to the sound files, and even then I had to turn it up loud to hear her.

It's funny when I'm shooting a guard and he's shooting me, he's nearly dead when I hide then he can't find me and says, "Just the wind I guess" or "just rats," and aslo when a drunk guard sees me and says, "WH-WHO... the hell, are... YOU!"
