I hate to raise the specter of 'immersion', but arbitrarily restricted movement really does feel unnatural. An important part of movement in a game is making your actions feel like a direct result of your button presses or joystick moving or what have you - if you press jump, you should jump, and if you happen to careen off a cliff because you weren't looking, too bad, you should be more careful (or possibly the level designers should make the drop more visible). Otherwise, it does feel like you're interacting with a game system, and not moving with about the same level of freedom that an actual human would have.
It's the same way with takedowns. When I swing my blackjack at three guards and knock them out normally, but suddenly the fourth guard knockout cuts to some fancy moves by Garrett - well, no, I only wanted to swing the blackjack, not do a backflip or whatever. Special takedown animations ought to be predictable and short so that it 'feels' like you're the one doing it.
And now I've said a bunch of words about what I want to happen when you press buttons in a video game. Hope I don't sound crazy!

So not only is there a button that does it for you, but you can't do it on your own even if you want to.
So much for "play it your own way".
