Anyone know of any good mods / plugins that provide more variety in the "light armor" department? I'm pretty sick of using the Glass / Saviour's Hide combination I've been wearing for the last 20 levels.

There is the Dark Brotherhood armour, but it's not as good as glass. It turns up when you get Tribunal.
Otherwise, glass is the best light armour.
Someone may be able to suggest a plugin, though.

Clean Bethaliz's Lefemm armor - Recloured Domina, Gold, Chain, and Imperial Armor. They can be found in Sadrith Mora at Dirty Muriel's Club, being sold by somone in suspiciously bright armor.
Comment- Some of the armor is very very nice looking imo ;)
