Also, Splines aren't much use for game-engine editing, since they're rather more for high-poly stuff (like animations). You can use them, but then you've got to turn all the settings down (and maybe tweak a lot of things) to get them to a state that you can process and use in realtime. That said, I think the quake engines have supported them (or their near-friends, Patch-grids at least) since Q3A, so it's not totally no-go, just not from the kind of Character Modelling tutorials that are likely to help you.
As for booleans: they're an okay place to start, but learning to use Inset, Extrude and Bridge (as well as cut and slice!) willl help you a lot more if you're working in polygons.
