I am a chili pepper aficionado, but I won't eat a raw one hotter than a Scotch Bonnet.
I love the taste of Scotch Bonnet, by the way, especially in jerk, but they're rare to find in stores here. So I've got some seeds to plant. I enjoy Sichuan cuisine, so I've also got seeds for chao tian jiao (facing heaven) and xiao mi la. In the past I've grown Thai bird chilies, and I especially love the ornamental variety because they are full of heat and flavor. But now the small, finger length Thai chilies are reliably available at my grocery store so I stopped growing the little ones. I tried growing bhut jolokia before but wasn't successful.
I've tried many more hot sauces than I can remember. My extended family keep buying me new ones for gifts. But there are a few that I buy for myself over and over. If I had to pick just one condiment to bring with me to a deserted island, it would be (
https://www.reddit.com/r/hotsauce/comments/tvuz6c/does_anyone_know_what_happened_to_tropical_pepper/) Tropical Pepper Co. Ghost Pepper Sauce. It doesn't taste particularly salty or garlicky or vinegary, and it doesn't have that artificial flavorless heat of an extract sauce, it's just ghost pepper puree and I haven't found anything else like it. To my huge dismay, it was discontinued earlier this year and I'm down to my last bottle. :nono:
At the complete other end of the heat spectrum are (
https://www.chefironmike.com/) Chef Iron Mike's sauces. These are not hot, But they are very flavorful and well crafted for their intended food pairings. I've probably gone though 5 or 6 bottles of his Italian-style sauce.

As far as raw peppers go, I prefer cayenne, since they have the sweetness of bell peppers combined with the heat. Habaneros, scotch bonnets and ghost peppers lack flavour and the heat is a bit overwhelming when taken straight. I usually chop them up into stews, already pickled most of the time

Well then.Drunk.

I'll have to check the Iron Mike's sauces out. I like heat, but flavor is just as important. I can do a hot sauce that's hot, yet the flavor isn't super-noticeable, but I can't stand sauces that just taste bad. I have tried some over the years that were just awful.
I've never had a Scotch Bonnet by itself, always in a sauce with other peppers, but I like the flavor they impart. I need to get me some seeds and get those planted ASAP.

I agree that fresh cayennes have a great flavor, but that's usually lost in sauces. I find habaneros and ghost peppers to have plenty of flavor, each unique. I can't wait till mine are done growing.

I used to really enjoy super hot peppers and sauces. Dave's Insanity sauce was a favorite for a long time. Now I hardly even use black pepper on my food. I may have overdone the hot stuff in my youth....

I haven't had Dave's in a very long time. My dad used to buy it. All I remember is I didn't care for the taste of it.

The original Dave's Insanity Sauce was my introduction to high Scovilles. It came out when I was in my early 20s, and it developed a reputation quickly because there wasn't anything like it readily available. I used one bottle and didn't re-buy. It packs a lot of long-lingering heat, so I used it in small quantities only to kick things up, not for flavor. The flavor was weak and uninviting. But it has nostalgic value for a lot of people my age.

Dave's definitely isn't the best for flavor but it had that crazy heat that was very unusual in the 90's. We used to have taco/burrito and tequila parties using Dave's in the meat. The rule was that you weren't allowed to cool your mouth off with anything that didn't have tequila in it. Those were really rough hangovers.

Silver Patron doesn't have a hangover in the bottle but it might be because it's so expensive you can't drink enough. Not nearly enough for Dave's anyway.
Unfortunately I didn't get the super power of withstanding hot stuff out of Covid. I got the loss of breath climbing stairs part. I do still like raw horse radish though.
