Man, there is a noteworthy amount of streets in the mission 'Assassins', from TG, that you don't even have to visit. They are as detailed as usual, and I just found out that there, at the very end of the map, is the initial setting of 'The Lost City'. Beautiful. Have you found other interesting spots in missions?

The place where you start in Escape is the same room you find in The Sword where there was a locked door you couldn't open, but now the door's wide open.
Here are five other interesting things I found in the 20 years I've been playing Thief:
1: It is possible to get into the area just outside the cloister gate in Return to the Cathedral without having to blow the door open and you can get there without ever having to enter the cathedral itself.
2: It is possible in the tutorial level to open the two locked doors at the end of the corridor when you've completed the training course, and find out what's behind the doors.
3: I found at least one other way inside the Hammerite temple in Undercover and in Strange Bedfellows that doesn't require you to go through the front gate.
4: There is a secret area in the Training level with a funny easter egg if you manage to get through the iron bars your sparring partner walks through before he does. You have to do this on Expert difficulty for this to work.
5: There are a few "testing" levels floating around somewhere on TTLG that date back to Spring 1998. What makes that date significant is that Thief 1 was released in November, 1998, which would imply that these were once official maps used by the developers. I found about 4 of them and one can only guess what they were used for.

Whoa, I need to see these, do you have a link?

With the right timing and locations, it's possible to get all the way on to the roof with NewMantle. Similarly, in The Haunted Cathedral you can mantle on to several trees and use them as a point to get off the map. Neither of these places have much that's terribly interesting since you're not meant to be there, but I always like to find ways to get where I'm not supposed to be.
Also, if you play The Lost City on Normal and buy 2 speed potions from the shop, you can use the "So this is the Lost City. It's not lost no more." ledge as a springboard to jump straight to the talisman with one of the potions. You can use the beams outside the windows to rope on top of the tower, and use your other speed potion to get back. With the right timing and some practice, you can get the whole mission done in less than a minute.

You can get into Ramirez's mansion in Assassins by climbing over the wall from outside, and skip the front gate. I remember using some crates to do it

Finding them will be difficult as I don't remember what I typed in to find these. I just came across them by accident. Because the search history was stored on a computer I no longer use, I can't backtrack to see which threads I looked at. I think it was something to do with the Thief 2 Demo and someone referenced some old testing levels for Thief 2, and then someone else listed some old levels from Thief 1. If I find it again, I'll let you know. :)

Thanks. I have some of the old mission files for Thief 2 Gold that never got done, but had no idea there were some leftover testing ones from T1

Really? Please tell me how!

If you're quick enough, you can bash them down with the sword. They're wood, so they'll open with enough damage.
