I saw him once near Whiterun's western watchtower (I think). I'm guessing you don't want to relieve the suffering by using player.moveto...
Could have sworn I took a screenshot but it seems to have disappeared.

Actually one of my friends claim he has gotten Shadowmere killed on the Xbox version. I haven't gotten that far on the PC version. I'm only level 40 and have just now started on my mission lines. I'm starting with the Bard's College, and Thieves Guild missions. I broke so many questlines before so I'm very careful.
First two times I saw the Headless Horseman was near Whiterun. The third time, I don't remember because I didn't follow him, and I was like.. "Errr... its that headless horseman again..."
The last time it was in The Reach (not too far from Markarth). I noticed that he does get kinda lost sometimes. I just think it's due to the some pathfinding issue. He doesn't appear to follow a set path, the road to Whiterun from The Reach wasn't along the same road I've seen him before (outside the city gates riding past Whiterun to his resting place). When I saw him the last time in at night outside a foresworn place, I got all excited thinking he was going to lead me somewhere new.
Also don't ever sell your homecooked meal, on the Xbox selling it, REMOVES the option to ask for another one the next day.

Thanks for the info regarding the headless horseman. Guess I'll scout around Whiterun 'tonight' for awhile. I've completed all the main quests and have quite a few of the radiant quests under my belt as well, so until Bethesda comes out with the Creation Kit I'm trying to keep myself occupied. There are, of course, the special quests that you can only get when your magicka reaches level 90 or 100, but I'm only half-way there so far. Maybe I'll even restart the game and this time concentrate more on my magic skills instead of being a flat-out warrior goddess.

I thought I'd lost her too the first time we fell down some rocks, but after a few in-game days she reappeared upon fast-travel.

Have you only had one character so far? I'm on my third. I started on a High Elf, which seemed suitable for a Mage given the magicka bonus up front. However, I find that early on trying to fight with spells alone is a bit tricky before you get hold of decent things to cast or various perks to make it possible to do enough damage to more challenging enemies...

Yeah, I have a tendency to try to wring everything I can out of my first play-thru and then start all over again as a different character. I don't know that I'll play a character of a different race next time around though - playing a Nord is so
very appealing to me for some odd reason.

They all have their advantages, but Nords are quite useful because of the frost resistance, and one encounters quite a lot of frosty magic. Also fellow Nords call you kinsman, and you can prove to the Nord bandits that you're more of a Nord than they are.
It does seem like not choosing the Altmer for a Mage character puts you at a bit of a disadvantage though, all the other races seem to only have fairly subtle differences. Although having another look at (
http://www.uesp.net/wiki/Skyrim:Races) this suggests Bretons and Dunmer would be good choices as well.

Maybe I'll come back as a Breton? Played elves in Morrowind & Oblivion, so it's time to try something new. Also, it doesn't seem as though elves of any kind are very welcome in Skyrim, either. Thanks for the link, hon.

Being an elf doesn't really affect the game though, except that other elves of your variety are pleased to see you.
I started an Altmer character but haven't taken her anywhere for a while. They seem to look a bit severe. This makes them suitable for being the Thalmor, but Bethesda's elves have never really matched up with my idea of them, which mostly comes from Tolkein.

Also there is a Breton lady who hasn't got very far yet. They seem to look like grumpy french women no matter what you do with the brow height...
