I'll cop to being a horrible pistachio addict as well, since I keep an endless supply of them with me when I play poker, and I've reached the point where I just crack and eat them one-handed, with out looking, or indeed, even thinking about it. They are to me what Oreos are to Teddy KGB. 'cept I use them to keep from having tells. ;)

http://www.sahadis.com/category77.ihtml) prebagged ones are also good, and still blow away the ones you find in your supermarket, but no-where near on par with the handbagged fresh ones).
However, if you don't like shelled pistachios, it's probably just because you haven't had really good roasted ones, because when roasted properly without their shells they take on a smoky, almost bacony, flavor. Out of this world.

First, I am compelled to point out that, properly speaking, neither the cashew nor the peanut are actually nuts and the filbert and the hazelnut are the same thing.
Now, having had my anal-retentive moment....
pistachios are evil! I'm sure the shells have some special flavor lurking in them because shelled pistachios don't taste like pistachios you pop into your mouth whole and then suck and shell with your tongue until your tongue swells up from the salt and gets visciously cut along the sides by the wicked shell edges which seemed so very friendly initially but are now your deadliest enemy because no matter how much pain you are in, you simply cannot stop EATING THEM!

Yeah, I periodically get a craving for plain salted nuts and eat a couple hundred grams of them at a time. Eventually I do tire of them. I think it's when my mouth is so coated in salt I can't bite any more.
