In Thief Gold, where exactly would context-sensitive jumping alter the flow of the game in any appreciable way? I'm coming up blank.

...jumping over spiders, jumping to retrieve arrows, jumping to alter your line of sight, jumping to make noise to manipulate adversaries, jumping down staircases, jumping from a higher vantage point over an adversary rather than just dropping down next to it, jumping to avoid being hit by projectiles...the list goes on and on.

Did they say anywhere they would have sound change depending on what surface you where on? I'm not criticizing you that just made me realize this has never been mentioned before and now I'm wondering for myself.

Now that I think about it I don't recall the surface them being on being acknowledged in any of the thief videos.
That was such a core mechanic that added an extra depth of complexity for tackling a situation that seems to have been overlooked by everyone. I don't think that was mentioned in that thread full of features.

Walking through water or over broken glass has been mentioned as being noisy, but I don't know how much changes in general surfaces like wood, stone, tile, grass, carpet, metal will affect things.
Seems like I recall a comment during one of the demos about grass being quieter, but I'm not certain where I heard it. I think it may have been Daniel Winfield Schmidt talking.
