I suspect you're not seeing software mode but rather texture filtering disabled. You can change that via a config file and I personally prefer no texture filtering for older games like Thief or Doom.
Though GZDoom has a nice filter that preserves pixel sharpness while smoothing distant aliasing, and I do wish NewDark would support that.

Are there a lot of Undead missions beyond Death's Dominion and The Brand? Undead aren't my cup of tea, and I'll just skip those if so, but if every other level is undead then I'll see about getting that undead-killing sword in Death's Dominion.

Mission 8 (jaws of darkness) is sadly another creepy creature mission and the last mission (10) is aswell.
The other missions are very cool and without any undead :)

This is out of my understanding, honestly :) My personal opinion: Doom was always in software=pixelated. That's completely normal and that's the way it should be played. Thief, on the other side, is a GPU accelerated title with texture filtering enabled by default and pixelated software mode was a sign of poor pc. So for me there must be no pixelated textures in Thief :)

Problem was in Steam Deck itself, not Thief's mipmapping settings. Pixelated image was caused by Half Rate Shading option in steam deck os.

The Brand is very important for the story. The item you mention in the spoiler code
makes it much easier to deal with the undead. Although you have to get closer than with holy water etc, you can at least get rid of them permanently with no loss of supplies.
Missions
8 and 10 were mentioned:
In M8 it's more of a theme. There are some genuine undead but there's quite a variey of other AIs with their own ways of being dealt withIn M10 there is a mixture of undead and human. They're quite easy to avoid. Some of them are sword-guard zombies that can be killed with an overhead whack from the sword, like Haunts. At the very start of this mission there are some that are hard to sneak/fight past, but you can get into the building's attic and go over them.I'm not keen on the undead either, but since I'd agreed to do round 2 of beta testing I made myself put up with them (a bit like Hume in fact).
